Zambian food is good food

Dried bean leaves

Ingredients

  • 1 cup of dried bean leaves
  • 1 tomato
  • water
  • 1 cup of powdered groundnuts
  • cooking oil (optional)
  • 1 medium onion
  • Salt to taste

Method

  • Remove stalks from the dried bean leaves
  • Cook for 10 to 15 minutes
  • Add tomato, onion and the powdered groundnuts
  • Mix continuously until groundnuts are cooked

Serve with nshima.

Rape vegetable

Ingredients

  • Rape leaves
  • 1 tomato (not very ripe)
  • 1 small onion
  • 2 or 3 table spoons of cooking oil
  • Salt to taste

Method

  • Wash the leaves
  • Cop the leave into fine stands
  • Place the rape into a pot and add boiling water
  • Pour the rape into a colander to drain the water
  • Fry the onion and tomato in sauce pan
  • Place the drained rape into the sauce pan.
  • Mix continuously

Serve with nshima.

Dried Mushroom with groundnuts

Ingredients

  • 3 or 4 cups dried mushrooms
  • 1 medium tomato or tomato paste
  • 1 medium onion
  • Salt
  • Powdered groundnuts

Method

  • Clean the mushroom
  • Boil the mushroom
  • Add onion, tomato, powdered groundnuts, and salt
  • Add a little water if it becomes too think

For fresh mushroom heat with onion till brown, add tomato.

Serve warm with rice or nshima.

Fresh cassava leaves with groundnuts

Ingredients

  • 2 or 3 cups of pounded cassava leaves
  • 1 Medium tomato
  • 1 small onion
  • 1 1/2 cups of pounded groundnuts
  • 3 table spoons cooking oil
  • Salt to taste
  • Chilli (optional)
  • Water

Method

  • Place the cassava into boiling water
  • Boil till tender
  • Add onion, tomato, cooking oil, salt, chilli and powdered groundnut. Stir continuously.

Serve with nshima.
